Mango Lassi (Mango yogurt drink)


This is a sweet fruit yogurt drink. Better served chilled after a nice meal. It's also good for your digestive system. Makes 1 tall glass serving.

Ingredients:
1/3 cup Plain Yogurt
1/4 cup Cold Milk
1 cup Mango Pulp
1/4 cup Ice Cubes
1 tbs Sugar
Dash of Salt 

Direction

  1. In a blender, combine the yogurt, milk, water, pulp, sugar, salt, and ice cubes.
  2. Mix in medium-high until completely mixed.
  3. Pour into tall glass with a straw and serve immediately.


Dodhi (yogurt)

This is a sweet yogurt dish. Better served chilled after a nice meal. It's also good for your digestive system.

Ingredients:
32 ounces natural yogurt
1 can (12 fl. oz.) evaporated Milk
1 can (14 oz.) sweet condensed milk
Orange food color

Direction

  1. Preheat oven 400 F. Mix all the ingredients except the food color in a blender over high speed for 2 minutes.
  2. Mix a little food color to get a light peach color to the mixture and mix again for another minute.
  3. Pour the mixture in an ovenproof glass bake ware.
  4. Place in the middle rack of the oven and bake uncovered for 10 minutes.
  5. Now turn the temperature down to 150 F and bake for another 20 minutes.
  6. Turn off the oven and leave it in there for another 10 minutes.
  7. Now take it out of the oven very carefully and put it in the refrigerator for 6 hours or until chilled and thickened.
  8. Serve chilled.

Gulab Jamun


It is a traditional sweet. It's a fried milk ball (like donut), which is soaked in sugar syrup.

Ingredients:
1 cup non fat dry milk
1/2 cup Bisquick pancake mix or 1/2 cup all purpose flour and 1/4 tsp baking powder
1 tbs butter in room temp.
1 tbs semolina
1 heavy whipping cream small to make the dough

Direction

  1. To make the syrup mix the water and sugar in a cooking pot and boil till all the sugar is dissolved. Now add the cardamom pods crushed, and cinnamon sticks and turn the heat to low.
  2. Mix the powdered milk Bisquick pancake mix, semolina, and cardamom powder well. Add the butter and mix well.
  3. Now add a little of the thick whipped cream at a time to them and knead to make a dough that is soft but not sticky.
  4. Divide the dough into walnut sized balls and roll between slightly greased palms till smooth. Heat the oil in a wide pan on a low to medium flame.
  5. Fry the dumplings, stirring often to brown on all sides. Do not cook on very high heat as the dumplings will burn on the outside and remain raw inside!
  6. When cooked, drain (with a slotted spoon), remove the dumplings from the oil and transfer immediately into the sugar syrup.
  7. Turn off the heat and cover the pot with the dumplings and syrup. Let the dumplings soak in the syrup for 2 hours.
  8. Server warm or cold with a drizzle of the syrup if desired.

Egg Pudding (Flan)


A saweet egg pudding with a creamy texture. Kind of like a cheese cake.

Ingredients:
3/4 cup granulated sugar
1 can (12 fl. oz.) Evaporated Milk
1 can (14 oz.) sweet condensed milk
4 large eggs
1 tablespoon vanilla extract
A dash of salt
A dash of orange food color
1 garnish of fresh fruit, (optional)

Direction

  1. Preheat oven to 325° F. Heat sugar in small, heavy-duty saucepan over medium-low heat, stirring constantly, for 3 to 4 minutes or until dissolved and caramel colored. Quickly pour onto bottom of deep-dish 9-inch pie plate; swirl around bottom and sides to coat.
  2. Combine evaporated milk and sweetened condensed milk, eggs, vanilla extract, salt, and food color in medium bowl and bit the mixture with a fork for 5 minutes.
  3. Pour the mixture into prepared pie plate. Place pie plate in large roasting pan; fill roasting pan with warm water to about 1-inch depth.
  4. Bake for 45 to 50 minutes or until knife inserted near center comes out clean. Remove flan from water. Cool on wire rack. Refrigerate for 4 hours or overnight.
  5. Run a small spatula or knife around the edge of pie plate to loosen up the pudding. Invert serving plate over pie plate and turn over while shaking gently to release the pudding.
  6. The caramelized sugar forms sauce and a nice coating. Garnish with fruit as desired and serve chilled.

Spiced Cookies


If you don't like sweet cookies then this is perfect for your taste bud. Makes about 24 cookies.

Ingredients:
3/4 cup sweet butter
1 cup dark brown sugar
2 cups all-purpose flour
pinch of salt
1/2 tsp baking soda
1 tsp cinnamon powder
1/2 tsp coriander powder
1/2 tsp nutmeg powder
1/2 tsp clove powder
1/2 tsp ginger powder
2 tbsp spiced rum (can substitute with apple cider)

Direction

  1. Lightly grease 2 cookie sheets with a little butter
  2. In a large mixing bowl, cream together butter and dark brown sugar and beat until light and fluffy.
  3. Shift the flour, salt, baking powder, cinnamon, coriander, nutmeg, clove and ginger into the creamed mixture and mix well until all the ingredients are thoroughly combined.
  4. Stir the dark rum or apple cider into the creamed mixture.
  5. Using 2 teaspoons, place small mounds of the mixture onto the cookie sheet 3 inches apart to allow for spreading during cooking. Flatten each mound slightly with the back of a spoon.
  6. Bake in a preheated oven at 350 F for about 10 minutes, or until golden.
  7. Transfer the cookies to wire racks and let them cool and crispen before serving.
